    Description

    Miquel Pons Cava Reserva has fresh citrus and stone fruit flavours with a touch of yeastiness from ageing for a minimum 24 months on the lees. Crisp and dry, quality Cava with a good finish. This is an organic sparkling wine. They use the traditional grapes in its making. The method of making the wine is the same as Champagne. Miquel Pons produce these wines in the Penedes region of Catalonia. You can read about our visit in this blog.

    Miquel Pons Cava Reserva has 60 hectares of vineyards. They extend from the south of Arboç to the north of Subirats. This allows them to cultivate different grape varieties with different geographical characteristics. The lands of Penedès and the soil’s richness in nutrients have long been recognised as one of the best productive areas for the cultivation of vines. The  rainfall in this area is sufficient to allow quality grapes to be grown.

    The production philosophy is clear.  They always produce the wine with low residual sugar content. The production is only with the first pressing musts obtained from the grapes. They carry out slow and fractional pressings to obtain the best musts.

    The winemaker works with yeasts extracted from grape varieties from the area in order to highlight the varietal characteristics.  In production, they use non-aggressive filtering and stabilization processes.

    In 2013, they began the path towards conversion to organic vineyards. This meant consumers could be confident that they practise sustainable agriculture. They use low doses of sulfur and copper.
