I am sure I have chosen this champagne before, but maybe not the rosé from Cordeuil Pere et Fille. Certified organic in 2 stages: 2015 and 2019 these champagnes are aged on the lees for at least eight years. This gives wonderful texture and flavour. I love a glass before dinner or with a robust salad such as Beetroot, Pecan and Goats cheese.
The two whites are complete opposites but both from Austria. ‘Green’ is made from the Gruner Veltliner grape and is crisp and dry with good balancing acidity. Whilst the Chardonnay is aged in oak: full and complex – I would happily have it with my Christmas dinner.
I like quite full flavours in my red wine, so I’ve gone for a Bordeaux with a bit of age or a Chianti which offers really good value. These will be great whether you have beef or turkey for your dinner or maybe the boxing night stew.
Finally, I always want everybody to try a dessert wine! This one is very approachable and goes well with fruit puddings. Remember you don’t need a lot and it’s not just all sweetness, there is good acidity there too and buckets of flavour. Give it a go! Nadolig Llawen!
